We’re looking for an ambitious and talented Sous Chef to join a brand-new hand roll bar opening in Central London. This is an exciting opportunity to be part of a fresh, modern concept with a cool, energetic vibe and a strong focus on high-quality sushi and hand rolls.

From day one, you’ll play a key role in helping to establish the kitchen, support the Head Chef, and contribute to creating a standout dining experience. The Role

As Sous Chef, you will:

• Support the Head Chef in the day-to-day running of the kitchen
• Help deliver a focused menu centred around premium hand rolls, nigiri, sashimi, and maki
• Maintain exceptional food quality, consistency, and presentation
• Lead service confidently in the Head Chef’s absence
• Assist with stock control, ordering, and food cost management
• Train and develop junior members of the kitchen team
• Ensure high standards of cleanliness, organisation, and food safety
• Contribute ideas and energy as the concept grows and evolves

About You

• Previous experience as a Sous Chef or strong Junior Sous Chef within a sushi-led operation
• Skilled in preparing hand rolls, nigiri, sashimi, and maki
• Passionate about Japanese cuisine and modern dining concepts
• Strong communicator with a positive, hands-on attitude
• Organised and confident in a busy service environment
• A team player who leads by example
• Eager to grow with an exciting new brand
