Our concept revolves around crafting bespoke handrolls that celebrate the finest sushi ingredients in a contemporary, immersive environment. Our goal is to create a unique and elevated sushi experience that combines artistry, authenticity, and an exciting new approach to Japanese cuisine.

We’re looking for a superstar Executive Chef/Head Chef to lead the kitchen team, ensuring the highest standards of quality, creativity, and exceptional customer service. This is a rare opportunity to shape the culinary direction of a Sushi new Bar in one of London’s most vibrant dining districts.


Key Responsibilities: Executive Head chef 

  • Leadership & Team Management: Lead, motivate, and develop a team of talented chefs and kitchen staff. Create a positive, collaborative kitchen culture, while maintaining discipline, standards, and productivity.

  • Menu Creation & Development: Curate and design a dynamic and innovative sushi menu, focusing on bespoke handrolls, with a mix of traditional and contemporary offerings that showcase your creativity and mastery of the craft. Constantly push the boundaries of sushi while respecting its roots.

  • Sushi Craftsmanship: Oversee the preparation of all sushi, ensuring every handroll is a work of art and meets the restaurant’s high-quality standards. Ensure consistent presentation, texture, and taste in every dish.

  • Customer Interaction & Engagement: As the face of the kitchen, engage with customers at the sushi bar, sharing your knowledge and passion for the cuisine. Create a memorable, personal dining experience that showcases your expertise and passion.

  • Operational Excellence: Manage kitchen operations, ensuring the efficient flow of food preparation, and maintaining the highest levels of cleanliness, organization, and safety. Keep an eye on inventory, ordering, and supplier relationships to ensure the freshest ingredients.

  • Quality Control: Maintain and elevate the standard of food at all times, ensuring consistency, quality, and creativity in every dish served.

  • Training & Development: Train and mentor kitchen staff, ensuring all team members have the skills and understanding to deliver exceptional sushi and uphold the restaurant’s standards.


Experience & Skills Required:

  • Extensive Sushi Experience: Minimum of 5+ years of experience in a high-end sushi restaurant, with a deep understanding of traditional sushi techniques and contemporary innovations.

  • Leadership in High-End Environments: Proven experience as an Executive Chef, Head Chef, or Sushi Chef in a high-end, fine-dining restaurant. Strong background in managing a kitchen team in a fast-paced, high-pressure environment.

  • Customer-Facing Personality: A chef who enjoys engaging with customers and is confident in interacting with them at the sushi bar, sharing your knowledge, and building rapport. Charisma and enthusiasm for the craft are essential.

  • Passion for Craftsmanship: A genuine passion for sushi, Japanese culinary traditions, and the pursuit of excellence in every dish. An understanding that sushi is not just food, but an art form.

  • Creativity & Innovation: The ability to think outside the box and design a modern, memorable sushi experience that aligns with the restaurant’s bespoke, high-end concept.

  • Strong Operational Skills: Excellent organizational and time-management skills with experience in overseeing kitchen operations, including food safety, inventory, and staff training.

  • A Strong Portfolio: Experience working in Michelin-starred or high-profile restaurants preferred.
